  • 4 large russet or 5 large red potatoes
  • 1 cup mayonnaise
  • 2 tablespoons red apple vinegar
  • ½ cup white onion (minced)
  • 1 red bell pepper (julienned)
  • 1 cup julienned carrot sticks
  • 1 stalk celery (small dice)
  • ÂĽ cup fresh chives (minced)
  • 2 tablespoons fresh parsley (minced)
  • Salt and pepper to taste

Instructions

  1. Wash potatoes thoroughly and boil in a pot covered with water until soft (about 15 minutes). Drain and cool slightly.
  2. Chop the onion, bell pepper, carrot sticks, celery, chives, and parsley; set aside in a mixing bowl.
  3. In another bowl, whisk together mayonnaise, red apple vinegar, sugar, mustard, salt, and pepper until smooth.
  4. Once cooled, peel if desired and chop the potatoes into cubes. Add them to the mixing bowl with vegetables.
  5. Pour the dressing over all ingredients and mix gently but thoroughly.
  6. Cover and refrigerate for at least one hour before serving.
