  • 4 (8-inch) tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz mushrooms, sliced
  • Olive oil (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Microwave sliced mushrooms for 2-3 minutes until soft; drain any liquid.
  3. Brush one side of each tortilla lightly with olive oil and place the oiled side down on a baking sheet.
  4. On half of each tortilla, layer half the cheese, followed by chopped spinach and softened mushrooms. Top with remaining cheese before folding over.
  5. Bake in the preheated oven for 6 minutes, flip each quesadilla, then bake for another 6-7 minutes until golden and crispy.
  6. Allow to cool slightly before slicing into wedges and serve warm.
