  • 1 egg white
  • 1/3 cup plus 1 tablespoon panko bread crumbs
  • 1/3 cup plus 1 tablespoon freshly grated Parmesan cheese
  • 45 sprigs fresh thyme leaves
  • 1/4 teaspoon kosher salt
  • Freshly ground black pepper
  • Pinch of cayenne pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Trim the ends of the zucchini and slice it into rounds about 1/4 inch thick.
  3. In a small bowl, whisk the egg white until frothy. In another bowl, combine panko bread crumbs, Parmesan cheese, thyme, salt, pepper, and cayenne.
  4. Dip each zucchini round in the egg white to coat both sides, then transfer to the panko mixture and press down gently for an even coating.
