  • 2 teaspoons vanilla
  • 1 1/2 cups buttermilk

  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla for frosting
  • 3 1/2 cups icing sugar

Instructions

  1. Preheat oven to 275°F (135°C) and grease a 9 x 13-inch baking pan.
  2. Mix mashed bananas with lemon juice; set aside.
  3. Combine flour, baking soda, and salt in a bowl.
  4. Cream butter and sugar until fluffy in a large bowl.
  5. Add eggs one at a time and stir in vanilla.
  6. Alternately mix in flour mixture and buttermilk until just combined; fold in banana mixture.
  7. Pour batter into the prepared pan and bake for about an hour or until a toothpick comes out clean.
  8. Cool the cake before frosting with cream cheese mixture.
