  • 56 medium sweet potatoes, peeled & cut into thin medallions
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the sweet potatoes and slice them into thin medallions. Arrange them in a single layer in a baking dish.
  3. In a small saucepan over medium heat, combine butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt. Stir until melted and smooth.
  4. Brush about three-quarters of the sauce over the sweet potato medallions. Cover with foil and bake for 45–50 minutes.
  5. Remove the foil and drizzle remaining sauce over the top. Sprinkle with chopped pecans and mini vegan marshmallows.
  6. Switch to broil mode and broil for 1–2 minutes until marshmallows are golden brown.
  7. Allow to cool for 10–15 minutes before serving.
