  • 2 3/4 cups unbleached all-purpose flour
  • 3/4 cup unsalted butter (room temperature)
  • 2 cups granulated sugar
  • 4 eggs (room temperature)
  • 1 cup sour cream (full fat)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and coat a bundt pan with cooking spray.
  2. Toss blueberries with 1 tablespoon of flour; set aside.
  3. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
  4. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time followed by vanilla.
  5. Mix in vegetable oil and alternate adding dry ingredients with sour cream until combined.
  6. Gently fold in the blueberries.
  7. Pour batter into prepared bundt pan and bake for 50-65 minutes or until a toothpick comes out clean.
  8. Allow to cool before removing from the pan.
