  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 large onion
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 1 tbsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (adjust to taste)
  • chicken broth (enough to cover)

  1. Heat vegetable oil and butter in a large skillet over medium heat. Add chicken pieces in batches and cook until browned (about 5-7 minutes). Remove and set aside.
  2. In the same skillet, sauté chopped onions until translucent. Add minced garlic and grated ginger; cook until fragrant.
