  • 10.5 ounces mini vegan marshmallows
  • 1/2 cup creamy peanut butter
  • 6 cups Rice Krispies cereal
  • 5.7 ounces Butterfinger candy bars (3 regular-sized or 9 Fun Size)

Instructions

  1. Spray a 9 X 13-inch baking dish with cooking spray to prevent sticking.
  2. Crush Butterfinger candy bars in a plastic bag using a rolling pin or mallet into small and larger chunks.
  3. In a large non-stick pot over medium heat, melt the unsalted butter. Add mini vegan marshmallows and stir until fully melted.
  4. Remove from heat and mix in creamy peanut butter until smooth.
  5. Stir in crushed Butterfingers until evenly distributed, then add Rice Krispies cereal, mixing until well-coated.
  6. Pour mixture into the prepared baking dish and spread evenly with a greased rubber spatula.
  7. Allow to cool completely before cutting into squares (about 1 hour).
