  • 8 flour tortillas
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup sour cream
  • 1 (4 oz) can diced green chiles
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken, 1/2 cup cheese, and half of the green chiles.
  3. Melt butter in a saucepan over medium heat. Whisk in flour and cook until golden. Gradually add chicken broth, simmering until thickened. Remove from heat; stir in sour cream and remaining chiles.
  4. Spoon chicken mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour the sour cream sauce over enchiladas and sprinkle with remaining cheese.
  6. Bake uncovered for 20-25 minutes or until bubbly and golden.
