  • 6 (4 to 6 ounces each) boneless skinless chicken thighs or breasts (cut into bite-sized pieces)

  • 1 small onion (sliced)
  • 1 recipe or package fajita seasoning mix (taco seasoning may also be used)
  • 1 cup sour cream
  • 4 ounces cream cheese (softened)
  • 2 cups cheddar cheese (grated)

Instructions

  2. In a skillet, heat olive oil over medium heat. Add chicken pieces and sauté until cooked through. Set aside.
  3. In the same skillet, sauté sliced onions and bell peppers until tender.
  4. Return the chicken to the skillet and mix in fajita seasoning, sour cream, and softened cream cheese until well combined.
  5. Transfer mixture to a baking dish, top with grated cheddar cheese, and bake for 10–15 minutes until cheese is melted and bubbly.
