  • 3 medium zucchinis (cubed)
  • 1 medium yellow onion (chopped)
  • 2 large tomatoes (seeded and diced)
  • 1 c. shredded colby jack cheese
  • 1 c. uncooked instant brown rice
  • 2 tsp chili powder
  • 3/4 tsp salt
  • 1/3 tsp pepper

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef with chopped onion and green pepper for 5-7 minutes until no longer pink; drain excess fat.
  2. Stir in minced garlic, chili powder, salt, pepper, cubed zucchini, diced tomatoes, water, and instant rice; bring to a boil.
  3. Reduce heat to low, cover, and simmer for 10-15 minutes until rice is tender.
  4. Remove from heat and top with shredded colby jack cheese; let sit for a few minutes until melted.
