  • 2 cups + 1 tablespoon (250g) all-purpose flour
  • 2 tablespoons (30g) sugar
  • 1 teaspoon salt
  • 10g fresh yeast, crumbled
  • 3 large eggs (150g), beaten
  • 2/3 cup (165g) unsalted butter, softened and diced
  • 1 cup + 2 teaspoons (25 cl) whole milk
  • 1 teaspoon butter
  • 1 vanilla pod
  • 2 egg yolks
  • 1/4 cup (50g) sugar
  • 3 tablespoons (20g) cornstarch
  • 1 tablespoon all-purpose flour
  • 3/4 cup (120g) mini chocolate chips
  • 1/4 cup (50g) sugar
  • 1/4 cup (50 ml) water
  • 1 large egg + 1 yolk, beaten

Instructions

  1. In a stand mixer with a paddle attachment, combine flour, sugar, salt, and fresh yeast. Mix briefly.
  2. Add beaten eggs and knead until thick and smooth. Gradually incorporate softened butter until slightly sticky.
  3. Cover the dough and let it rise for about 2 hours or until doubled in size.
  4. Heat milk and butter with the vanilla pod; remove from heat when bubbling.
  5. Whisk egg yolks, sugar, cornstarch, and flour in another bowl. Gradually pour hot milk over while whisking.
  6. Cook on low heat until thickened into custard; cool in the refrigerator.
  7. Roll out dough; spread cooled custard over half and sprinkle with mini chocolate chips. Fold over, cut into rectangles, and let rise again for 2 hours.
  8. Brush with beaten egg mixture and bake at 350°F (180°C) for 10-12 minutes or until golden brown.
