  • 12 oz rotini pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Cook the rotini in salted boiling water until al dente. Reserve some pasta water, drain, and set aside.
  2. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add chicken strips seasoned with Cajun seasoning and garlic powder. Cook chicken for 8-10 minutes until golden brown.
  3. In the same skillet, melt another tablespoon of butter, then add minced garlic and sauté until fragrant. Pour in heavy cream and whole milk, add Velveeta cubes and stir until melted and smooth.
  4. Stir in mozzarella and Parmesan cheeses. Let the sauce simmer for 3-5 minutes, stirring often until thickened. Adjust seasoning with Cajun seasoning and salt.
  5. Toss the cooked rotini into the Alfredo sauce, adding reserved pasta water as needed for consistency.
  6. For the Cajun butter drizzle, melt the final tablespoon of butter mixed with a pinch of Cajun seasoning.
  7. Serve the rotini topped with seared chicken and drizzle with Cajun butter. Garnish with fresh parsley.
