  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 4 cloves garlic (2 chopped, 2 minced)
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 tsp Italian herb blend
  • Salt & pepper
  • Olive oil (for frying)
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • Fresh parsley (for topping)

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, Italian herb blend, salt, and pepper. Mix well and form into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides; set aside.
  3. In the same skillet, sauté sliced onion and bell peppers with minced garlic until softened. Stir in smoked paprika, chicken stock, heavy cream, tomato paste, salt, and pepper.
  4. Return the meatballs to the skillet, cover, and simmer for about 10–12 minutes until cooked through.
  5. Serve warm topped with chopped fresh parsley.
