  • 12 oz rotini or fusilli pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup of pasta water, then drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun seasoning and sear until golden-brown and cooked through, about 8-10 minutes. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic for about a minute. Stir in heavy cream and whole milk; bring to a simmer.
  4. Add Velveeta cheese, stirring until melted and smooth. Then mix in cheddar and mozzarella cheeses until thickened.
  5. Toss cooked pasta into the sauce, using reserved pasta water as needed to adjust consistency.
