  • 1 lb ground chicken or turkey sausage (mild or spicy)
  • 2 cups fresh spinach
  • 1 cup carrots, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the ground sausage until browned. Drain any excess fat and set aside.
  2. In the same pot, add minced garlic and diced carrots; sauté for about 3 minutes until tender.
  3. Pour in the chicken or vegetable broth and bring to a simmer.
  4. Add gnocchi and cook for 2–3 minutes until they float to the top.
  5. Stir in fresh spinach and heavy cream; let the spinach wilt while thickening the soup.
  6. Return cooked sausage to the pot; stir in dried thyme, salt, and pepper. Simmer for an additional 5 minutes.
