  • 2 tablespoons avocado oil
  • 3 tablespoons grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • Kosher salt (to taste)

Instructions

  1. Slice the zucchini into thin chips using a mandolin or sharp knife. Lay them on paper towels and sprinkle with kosher salt. Let sit for 10 minutes to draw out moisture.
  2. In a bowl, mix together parmesan cheese, garlic powder, paprika, and Italian seasoning. Pat the zucchini slices dry, then toss with avocado oil followed by the seasoning mix until evenly coated.
  3. Preheat the air fryer to 345°F (175°C). Spray the basket with olive oil spray and arrange zucchini slices in a single layer. Cook for 12-14 minutes, checking occasionally until golden brown.
  4. Serve hot with your choice of dipping sauces.
