  • 1 jalapeno pepper (diced)
  • 1 red bell pepper (diced)
  • 3 1/2 cups vegetable broth
  • 1 cup corn (fresh or frozen)
  • 3/4 cup dried red lentils
  • 15 ounces black beans (drained & rinsed)
  • 15 ounces red beans (drained & rinsed)
  • 15 ounces tomato sauce
  • 3/4 cup salsa
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon olive oil
  • 1/2 cup light cream cheese

Instructions

  1. Prepare the vegetables: dice the onion and red bell pepper, rinse the lentils and beans.
  2. In a crockpot, add vegetable broth, diced vegetables, lentils, corn, both types of beans, and tomato sauce. Stir in salsa and spices.
  3. Cook on low for about 6 hours or high for about 4 hours until lentils are tender.
  4. Stir in cream cheese until melted; adjust seasoning if needed.
  5. Serve topped with crushed tortilla chips for added crunch.
