  • 1 cup salted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a blender, pulverize freeze-dried strawberries into a fine powder.
  3. In a mixing bowl, cream together butter, granulated sugar, and vanilla until light and fluffy. Beat in the egg.
  4. Gradually mix in flour, baking soda, part of the strawberry powder, and kosher salt. Stir in strawberry jam until well combined.
  5. Roll dough into 1-inch balls and place them on the prepared baking sheet.
  6. Bake for about 8 minutes; tap the sheet lightly to flatten slightly before baking for an additional 2–3 minutes until edges are lightly golden.
  7. For icing, mix cream cheese, powdered sugar, hot milk, vanilla extract, and remaining strawberry powder until smooth.
  8. Once cooled, dip or drizzle icing over cookies.
