  • ⅔ cups starchy potato (cubed)
  • ½ tsp salt
  • ¾ cup flour
  • 2 tbsp vegan butter
  • 2 tsp sage (densely packed)

Instructions

  1. Peel and cube the pumpkin and potato, then boil in salted water until tender (15-20 minutes). Drain well.
  2. Mash the cooked mixture until smooth in a mixing bowl. Let it cool slightly before adding flour and salt.
  3. Gradually mix in the flour until a soft, non-sticky dough forms. Divide into sections for easier handling.
  4. Roll each section into ropes about ½ inch thick and cut into bite-sized pieces. Optionally, create ridges with a fork.
  5. Boil gnocchi in salted water; they are done when they float to the surface (about 2-3 minutes). Remove with a slotted spoon.
  6. In a skillet, melt vegan butter over medium heat, add sage, then gently toss in the cooked gnocchi to coat.
