  • 1 lb Zucchini, sliced ½ inch thick
  • 1 lb Yellow squash, sliced ½ inch thick
  • 3 tbsp Olive oil
  • ½ tsp Italian seasoning
  • ½ tsp Garlic powder
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchini and yellow squash into uniform ½ inch thick rounds and place them in a large mixing bowl.
  3. Drizzle olive oil over the squash and add Italian seasoning, garlic powder, sea salt, and black pepper. Toss until evenly coated.
  4. Spread the seasoned squash in a single layer on a baking sheet.
  5. Roast for 10-12 minutes until tender. For extra browning, broil for an additional 3-6 minutes if desired.
