  • 8 chicken drumsticks
  • 5 tbsp olive oil (3 tbsp for chicken, 2 tbsp for veggies)
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper to taste
  • 600 g cubed potatoes
  • 3 chopped carrots
  • 1 chopped red bell pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 200°C (390°F).
  2. In a mixing bowl, combine chicken drumsticks with olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper; toss until evenly coated.
  3. In another bowl, toss cubed potatoes, chopped carrots, and red bell pepper with olive oil, salt, and pepper until well-coated.
  4. Spread seasoned veggies on a baking tray and nestle marinated chicken among them.
  5. Roast for 40-45 minutes, turning halfway through, until the chicken is golden brown and cooked through.
  6. Let rest for a few minutes before garnishing with parsley and serving.
