  • 4 zucchini
  • 1 lb ground chicken
  • ⅓ cup honey
  • ⅓ cup soy sauce
  • 3 tbsp ketchup
  • 2 tsp rice vinegar
  • 6 garlic cloves, minced
  • 7 green onions, diced
  • ½ tsp red pepper flakes
  • 1 tsp toasted sesame seeds
  • 1 tbsp oil

Instructions

  1. Preheat your oven to 400°F. Cut the zucchini in half lengthwise and scoop out the centers.
  2. Brush the zucchini halves with oil and place them cut-side down in a casserole dish. Bake for 15–20 minutes until tender.
  3. In a mixing bowl, combine honey, soy sauce, ketchup, rice vinegar, sesame oil, red pepper flakes, and minced garlic; mix well.
  4. In a large skillet over medium heat, cook ground chicken until no longer pink (about 6–9 minutes).
