  • 4 large Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Fresh parsley
  • Red onion
  • Crumbled feta for topping

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the Yukons into uniform sticks.
  3. Soak the fries in cold water for 10-15 minutes; drain and dry thoroughly.
  4. Toss the dried fries in a mixing bowl with olive oil, salt, oregano, dill, black pepper, and garlic powder until evenly coated.
  5. Spread the fries on a lined baking sheet in a single layer and bake for 15 minutes. Flip the fries and bake for an additional 6-8 minutes until golden brown and crispy.
