  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Juice of lemon
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cooked brown or white rice
  • 1 tbsp chopped parsley
  • 1 tbsp olive oil (for rice)
  • 2 large carrots, sliced into rounds
  • 1 tbsp olive oil (for carrots)
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste (for carrots)
  • 1 tsp thyme or parsley
  • 3 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced (for sauce)
  • Salt & pepper to taste (for sauce)

Instructions

  1. Marinate chicken in olive oil, lemon juice, minced garlic, paprika, oregano, salt, and pepper for at least 30 minutes.
  2. Cook rice per package instructions; stir in chopped parsley and olive oil.
  3. Grill marinated chicken over medium-high heat for 5-6 minutes on each side until cooked through.
  4. Sauté sliced carrots in olive oil; add honey (or maple syrup), salt, pepper, and herbs until tender.
  5. Mix Greek yogurt, mayonnaise, Dijon mustard, minced garlic, salt, pepper, and smoked paprika to create the sauce.
  6. Assemble bowls: layer herbed rice at the base, top with grilled chicken slices and glazed carrots, then drizzle with creamy sauce.
