  • 500 g chicken breast
  • 1 cup broccoli florets
  • 1 cup green beans
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 tbsp vegetable oil
  • 2 cloves garlic
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste
  • 1 cup cooked mixed rice

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Cook the chicken pieces until golden brown and cooked through, then set aside.
  2. In the same skillet, add the remaining oil and sauté minced garlic for about 30 seconds. Add broccoli, green beans, and both bell peppers; stir-fry for 3–4 minutes until tender-crisp.
  3. Return the chicken to the skillet and add soy sauce, honey (or maple syrup), salt, and pepper. Stir well for another 2 minutes until heated through.
  4. Serve over warm mixed rice.
