  • 2 eggs
  • 1 cup sweet potato, cubed
  • 1 cooked turkey sausage link, sliced
  • 1 cup chopped kale or spinach
  • Avocado, sliced
  • 1 tsp olive oil
  • 1 garlic clove, minced
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper; roast on a baking sheet for 20-25 minutes until golden.
