  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In the bowl of a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse a handful of times to combine.
  3. Add cold butter to the flour mixture in the food processor and pulse until crumbly. Gradually mix in the cream and egg mixture until a dough forms.
  4. Shape the dough into a disc and chill in the freezer for 30 minutes.
  5. Roll out the dough to 1 inch thick; cut into wedges.
  6. Bake on a parchment-lined sheet for 20-22 minutes until golden brown.
  7. Prepare the glaze by mixing powdered sugar, chai spice blend, vanilla extract, cream, maple syrup, and salt until smooth.
  8. Once scones are cooled slightly, dip the tops in the glaze and let set.
