  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium saucepan, heat olive oil over medium heat. Add cranberries and cook until they soften (about 5 minutes). Stir in honey, orange juice, cinnamon, ginger, salt, and pepper. Cook until thickened (3–4 minutes) and let cool.
  3. Cut pockets in each chicken breast; stuff with Brie and cooled cranberry mixture. Secure openings with toothpicks.
  4. In a skillet over medium-high heat, sear chicken for about 2–3 minutes on each side until golden brown.
  5. Combine panko breadcrumbs with melted butter; sprinkle over chicken. Transfer skillet to the oven and bake for 20–25 minutes until internal temperature reaches 165°F (74°C). Let rest before serving.
