  • 1 carrot, peeled and cut into sticks
  • 1 zucchini, sliced into rounds
  • 2 garlic cloves
  • Juice of 1 lemon
  • Salt & black pepper to taste
  • 1 tbsp butter (or olive oil)
  • Fresh parsley or dill for garnish

Instructions

  1. In a skillet, heat half the butter over medium heat. Sauté garlic, carrots, and zucchini for 6-8 minutes until tender. Season with salt and pepper; set aside.
  2. Season the fish fillet with salt and pepper. In the same skillet, melt the remaining butter and sear the fish over medium-high heat for 3-4 minutes per side until golden brown. Add lemon juice in the last 30 seconds.
  3. Plate the fish alongside sautéed veggies and garnish with fresh herbs.
