  • 1/4 cup red onion (thinly sliced)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for frying)

Instructions

  2. Place one tortilla on a flat surface and add one-fourth of the filling on one half of the tortilla. Fold it over.
  3. Heat olive oil in a large skillet over medium heat. Add the folded quesadilla and cook for about 3-4 minutes per side until golden brown and crispy.
  4. Remove from heat and let it cool slightly before slicing into wedges.
