  • 1/4 cup (30g) vanilla protein powder
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 tsp peppermint extract
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)
  • 1/4 cup (40g) mini dark chocolate chips

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix until well combined.
  2. If the mixture is too dry, add almond milk 1 tablespoon at a time until sticky but moldable.
  3. Fold in mini dark chocolate chips evenly.
  4. Scoop out 1 tablespoon of the mixture and roll into balls using your hands.
  5. Place on a parchment-lined baking sheet and refrigerate for at least 20 minutes to firm up.
  6. Store leftovers in an airtight container in the refrigerator for up to one week.
