  • 3 medium potatoes (peeled and diced)
  • 1 medium onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 1 cup beef broth (or chicken broth)
  • 1 cup shredded cheddar cheese
  • Olive oil
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook for about 8-10 minutes until softened and lightly browned. Remove from skillet.

  4. Return potatoes to the skillet and pour in the broth; stir well.
  5. Cover and simmer for about 5 minutes until potatoes are tender.
