  • 45 lbs bone-in chicken pieces
  • 1 cup buttermilk
  • 1 cup flour
  • 1 cup Panko breadcrumbs
  • 1/2 tsp baking powder
  • 1 tsp celery salt
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp white pepper
  • 1 tsp dried mustard
  • 1 tsp paprika
  • 1 tsp ground ginger
  • 1 tsp Italian seasoning
  • 4 tbsp melted butter

Instructions

  1. Marinate chicken pieces in buttermilk for at least 30 minutes in a sealed plastic bag.
