  • 2 medium zucchinis
  • 3/4 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup parmesan cheese
  • 1/4 cup vegetable oil

Instructions

  1. Wash and slice zucchinis into ½” rounds.
  2. In one bowl, mix flour with salt and pepper. In a second bowl, whisk the eggs. In a third bowl, combine breadcrumbs and parmesan cheese.
  3. Dredge each zucchini slice in the flour mixture, dip in eggs, then coat with the breadcrumb mixture.
  4. Heat vegetable oil in a frying pan over medium-high heat until shimmering.
  5. Fry zucchini slices for 1-2 minutes on each side until golden brown and crispy. Drain on paper towels.
