  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • Zest of 2 lemons
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Begin by making the blackberry jam: In a saucepan over medium heat, combine blackberries, water, lemon juice, and sugar. Cook for about 20-30 minutes until thickened, stirring regularly. Smash the berries with a fork and allow the mixture to cool.
  2. Thaw the puff pastry sheets for about 20-25 minutes until pliable. Roll each sheet into a rectangle on a floured surface.
  3. Spread half of the cooled blackberry jam over one sheet and sprinkle half of the crumbled goat cheese on top.
  4. Cut the dough into strips (12 per sheet), fold each strip in half lengthwise, and twist gently.
  5. Preheat your oven to 400°F (200°C). Place twisted pastries on a parchment-lined baking sheet, brush with an egg wash made from whisked egg, and sprinkle with raw sugar mix.
  6. Bake for 16-18 minutes or until golden brown. Cool slightly before serving.
