  • Granulated Sugar (¾ cup)

  • Vanilla Extract (1 tsp)
  • All-Purpose Flour (1 ¼ cups)

  • Salt (¼ tsp)
  • Brown Sugar (½ cup)
  • Melted Butter (2 tbsp)
  • Pineapple Rings (cut into smaller pieces)
  • Maraschino Cherries (halved)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. In another bowl, whisk flour, baking powder, and salt. Gradually stir this into the wet mixture until just combined.
  5. For the topping, mix melted butter and brown sugar in a small bowl.
  6. Spoon about 1 teaspoon of the topping onto the prepared baking sheet. Top with pineapple pieces and maraschino cherries.
  7. Flatten about 1 ½ tablespoons of cookie dough over each fruit topping.
  8. Bake for 12–15 minutes or until golden around edges. Let cool before flipping to reveal the topping.
