  • 1/2 cup granulated sugar (100g)
  • 2 cups all-purpose flour (250g)
  • 1 cup shelled pistachios (120g)
  • 4 oz dark chocolate (113g)

Instructions

  1. In a mixing bowl, beat room-temperature butter until soft.
  2. Add granulated sugar and mix until fully combined.
  3. Gradually incorporate all-purpose flour until it resembles chunky breadcrumbs. Use your hands to form a smooth dough.
  4. Fold in two-thirds of the chopped pistachios, reserving the rest for topping.
  5. Shape the dough into a log and wrap it in plastic wrap; chill for one hour.
  6. Preheat your oven to 340°F (170°C) and line a cookie sheet with parchment paper.
  7. Slice chilled dough into 1/2 inch rounds and place on the baking sheet.
  8. Bake for 12-18 minutes until edges turn golden brown; cool on the sheet for 10 minutes before transferring to a rack.
