Pumpkin Feta Pasta is a creamy, comforting dish that perfectly balances the sweetness of roasted butternut squash with the tangy flavor of feta cheese. Ingredients

  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 handful walnuts
  • 8 sprigs of thyme

Instructions

  1. Preheat your oven to 200°C/400°F.
  2. Peel and cube the butternut squash into 2cm pieces, then place it in an oven-safe dish.
  3. Add whole garlic cloves around the pumpkin and sprinkle with thyme, olive oil, salt, and pepper.
  4. Place a block of feta cheese in the center and roast for about 25 minutes until tender.
  5. Cook the pasta according to package instructions; reserve some pasta water.
  6. After roasting, mash the garlic and break up the feta in the dish.
  7. Mix in spinach and cooked pasta, adding reserved pasta water as needed to create a creamy sauce.
  8. Serve hot, topped with chili flakes and chopped walnuts.
