  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1/2 cup pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 4 cups powdered sugar
  • 1/4 cup brown sugar, packed
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix yellow cake mix, melted butter, egg, pumpkin puree, and vanilla extract until well combined.
  3. In another bowl, beat cream cheese until creamy. Add eggs one at a time while mixing, then incorporate pumpkin puree, melted butter, spices, and powdered sugar.
  4. Pour half of the cake batter into the prepared dish. Spread the gooey layer over it evenly and top with remaining batter.
  5. Bake for 40-45 minutes or until edges are golden brown and center is set but still slightly gooey.
  6. While baking, prepare the frosting by beating together softened cream cheese and butter until smooth; gradually add sugars and vanilla until creamy.
  7. Once cooled, frost the cake generously.
