  • 2 medium zucchini
  • 2 medium yellow zucchini
  • 34 plum or Roma tomatoes
  • 1 small onion
  • 1/2 medium orange bell pepper
  • 3 cloves garlic
  • 1/4 cup fresh breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • Olive oil, salt, pepper, parsley, thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice all vegetables into thin rounds.
  3. Sauté sliced onion and garlic in olive oil until soft.
  4. In a greased baking dish, layer half of the zucchini slices, followed by half of the onion-garlic mixture, seasoning with salt and pepper. Layer half of the tomatoes next.
  5. Repeat the layering process with remaining vegetables and top with breadcrumbs mixed with Parmesan cheese.
  6. Drizzle olive oil over the top layer. Cover with foil and bake for about 30 minutes; remove foil for an additional 10-15 minutes until golden brown.
  7. Let cool slightly before serving.
