  • 1 cup shredded Swiss cheese
  • 3/4 cup drained sauerkraut
  • 4 ounces cream cheese
  • 1/2 cup rye breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a mixing bowl, combine corned beef, Swiss cheese, sauerkraut, and cream cheese until well mixed.
  2. Refrigerate the mixture for 20–30 minutes to firm it up.
  3. Scoop tablespoon-sized portions and roll them into balls.
  4. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of rye and panko breadcrumbs.
  5. Coat each ball in flour, dip in egg, and roll in breadcrumbs.
  6. Heat oil in a frying pan to 350°F (175°C) and fry the balls in batches for about 3–4 minutes until golden brown.
  7. Drain on paper towels before serving with the spicy dipping sauce made by mixing mayonnaise, ketchup, relish, hot sauce, and garlic powder.
