Ingredients

  • 2 large eggs
  • 1 handful fresh spinach
  • 1 small tomato, halved
  • 45 mushrooms (button or cremini), sliced
  • 1 slice sourdough or whole-grain bread
  • 1 tsp olive oil or butter
  • Avocado, sliced
  • Salt & pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Sauté the sliced mushrooms in a non-stick skillet over medium heat with olive oil or butter for 5-7 minutes until golden; season with salt and pepper.
  2. Add spinach to the skillet and wilt for 1-2 minutes; season lightly.
  3. Cut the tomato in half and either roast it at 400°F (200°C) for 10 minutes or sear face-down in a hot pan until charred.
  4. Toast the slice of bread to your liking.
  5. Fry the eggs sunny-side-up in the same skillet until whites are set and yolks are runny.
  6. Assemble by arranging the toasted bread topped with sautéed mushrooms, fried eggs, wilted spinach, roasted tomato halves, and sliced avocado.
