  • 1 white onion, finely chopped
  • 16 ounces cheddar cheese, shredded (divided)
  • 1 cup corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 box corn muffin mix (8.5 ounces)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a mixing bowl, combine drained zucchini, chopped onion, half of the cheddar cheese, corn kernels, jalapeño, eggs, garlic powder, cumin, salt, and black pepper; mix well.
  4. Gradually fold in the corn muffin mix until just combined.
  5. Pour mixture into a greased 9×13-inch baking dish and top with remaining cheddar cheese.
  6. Bake for about 50 minutes until golden brown on top and set in the center.
  7. Allow to cool slightly before slicing and serve warm.
