  • 15 oz can black beans, rinsed and drained
  • 10 oz can diced tomatoes with green chilies
  • 8.5 oz box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef. Add onion and garlic; sauté until translucent.
  3. Stir in corn, black beans, diced tomatoes, and seasonings. Simmer for about 5 minutes.
  4. In a separate bowl, mix corn muffin mix, egg, and milk until just combined.
  5. Layer the beef mixture in a greased baking dish and top with cornbread batter.
  6. Bake for 25-30 minutes until the cornbread is golden brown.
  7. Sprinkle shredded cheddar cheese on top and return to oven for another 3-5 minutes until melted.
