  • 34 garlic cloves (minced)
  • 1½ cups uncooked white rice
  • 1¼ cups vegetable broth
  • 1¼ cups salsa
  • 1 can (15 oz) kidney beans (drained and rinsed)

Instructions

  1. Soak the rice in cold water for at least 10 minutes, then drain.
  2. In a large skillet or pot, heat oil over medium heat. Sauté diced onion and bell pepper until softened (about 3 minutes). Add minced garlic and spices; cook for another minute.
  3. Stir in soaked rice, salsa, and vegetable broth. Bring to a boil.
  4. Cover tightly and reduce heat to low. Simmer without stirring for 15-20 minutes or until rice is tender.
  5. Remove from heat, let sit covered for a few more minutes. Stir in rinsed beans and garnish with fresh herbs before serving.
