  • 1 pound fresh strawberries, hulled and sliced

  • 2 tablespoons cornstarch
  • Juice from 1/2 lemon
  • 1 cup confectioners' sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • Rainbow sprinkles

Instructions

  1. Prepare the crust: In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Wrap and refrigerate for at least 30 minutes.
  2. Make the filling: Mix sliced strawberries with granulated sugar, cornstarch, salt, and lemon juice. Set aside.
  3. Preheat oven to 375°F (190°C). Roll out half of the chilled dough to fit a baking sheet lined with parchment paper.
