  • 1/4 cup panko breadcrumbs

  • 2 cloves garlic, minced

  • 1 tsp red curry paste
  • 1 small yellow onion, diced
  • 1 cup coconut milk (or broth)
  • Salt and pepper to taste
  • 1 tbsp neutral oil (for frying)

Instructions

  1. In a mixing bowl, combine ground chicken, panko breadcrumbs, egg, minced garlic, grated ginger, soy sauce, red curry paste, salt, and pepper. Mix until just combined.

  4. In the same pan, sauté diced onion until softened (about 3-4 minutes). Add Thai red curry paste and minced garlic; cook for an additional minute.
  5. Return the meatballs to the pan and pour in coconut milk or broth. Simmer for about 5 minutes.
