  • 9 cups shredded zucchini
  • 1 small yellow onion
  • 3 cloves garlic
  • 3 large eggs
  • ¼ cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 ¼ cups panko bread crumbs
  • 1 ¼ cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F.
  2. Shred zucchini, sprinkle with salt, and let drain in a colander for 15 minutes.
  3. Sauté diced onion in olive oil until soft, then add minced garlic and cook for another minute.
  4. Press excess moisture from zucchini and mix it with sautéed onion and garlic, eggs, cream, cheeses, and seasonings in a large bowl.
  5. Pour into a greased casserole dish and top with additional cheddar cheese.
  6. Cover with foil and bake for 35 minutes; uncover and add panko topping mixed with melted butter.
  7. Bake uncovered for an additional 15 minutes until golden brown.
