  • 1 large egg
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup cornstarch
  • Salt and pepper to taste
  • 2 tablespoons fresh garlic butter
  • 12 cups shredded cheddar cheese

Instructions

  1. Squeeze excess moisture from the grated zucchini using a kitchen towel for crispy patties.
  2. In a mixing bowl, combine the squeezed zucchini with the egg, Parmesan, cornstarch, salt, and pepper until a dough-like texture forms.
  3. Heat garlic butter in a skillet over medium heat.
  4. Form two patties with half of the mixture and cook each for 3–4 minutes per side until golden and crisp.
  5. On one patty, add shredded cheddar cheese, then top with the second patty. Cook for another 3 minutes until the cheese melts.
  6. Let cool slightly before slicing and serve warm.
